This blueberry sauce is a simple and delicious topping. It's sweet, tangy and loaded with blueberries. Drizzle over ice cream, pancakes, yogurt or cheesecake topping. This makes a small jar of about 6-8oz. For more, double the recipe.
In a saucepan, add the blueberries and cook over medium heat until they soften and release juices.
In a separate bowl, whisk together the sugar and cornstarch. Gradually add this dry mixture to the saucepan, stirring continuously as it cooks and thickens.
Once thickened, remove from the heat and stir in the lemon juice and vanilla extract.
Transfer the blueberry sauce to a jar and allow it to cool completely before refrigerating. It can be enjoyed for up to 1 week.
