Here’s your shopping list of ingredients that you may want to save for later:

🍋 For the loaf:
1 cup granulated sugar – 200 grams
zest of 2 lemons – about 2 Tablespoons
1/2 cup unsalted butter melted – 1 stick – 4 oz
3 eggs room temperature
1 teaspoon vanilla extract
2 tablespoons lemon juice 30 ml
1/4 cup sour cream or Greek yogurt 4oz or 60 grams
1/4 cup milk 4 oz or 60 ml
1 2/3 cups gluten-free flour 200 grams
1/2 teaspoon salt
2 1/2 teaspoons baking powder

🍋 For the Lemon Glaze:
1 1/2 cups powdered sugar 175 grams
1 Tablespoon lemon juice 15 ml
pinch of salt
1 teaspoon vanilla extract

  • ✨ NEW✨ Churro Brigadeiros are 💣! Possibly my favorite variation of brigadeiros and I hope you love them too!

INGREDIENTS

Brigadeiro fudge
- 1 tablespoon of butter, 15 grams
- 1 can of condensed milk, 14 oz. My fav is @lalecherausa 
- ½ cup of dulce de leche, about 150 grams also @lalecherausa 
- 1 teaspoon cinnamon

To roll
- 1/4 cup granulated white sugar, 50 grams
- 1/4 tsp cinnamon powder
- ¼ cup chocolate chips or callets – optional 45 grams

  • One of the FAQ in baking is “what does ‘fold in’ mean?”

“Fold in” in baking technically means to incorporate two ingredients of different consistencies, mostly light and airy ingredients into a thicker or heavier mixture. You’ll see this in recipes such as:

- Sponge cakes: where the egg whites and flour are “folded” into the egg yolk mixture 
- Any cake, loaf, or pancakes where over-mixing is not desirable. Most of the times, wet and creamy ingredients are mixed together and the flour mixture is just “folded” into the wet ingredients to keep the batter airy and with a few clumps. 
- Cookie or loaf mix ins: adding chocolate chips at the end of a recipe tends to be done “folding” them in. Since they go towards the end of the batter preparation, that means flour has already been added and you want to avoid whisking vigorously and developing too much of the flour gluten or deflating your batter. 

To put it simply, it is to mix gently and carefully, incorporating the sides and scraping the bottom@of the bowl for even mixing.

You’ll see this term A LOT in baking since one of the rules of baking delicious baked goods is to avoid over mixing once the flour goes in. Of course some exceptions apply in recipes where gluten development is important such as yeasted breads and others.
